Hi Sandra and puddy lovers.
I'm not really a puddy lover but I made this last night for a dinner party and it had the wow factor.!!! and so easy and cheap to make.!!! Got the recipe from one of the free " supermarket" mags. Try it - it's delicious.!!!
Makes 10 slices.
Ready in 20 mins plus 1.5 - 2 hours in freezer.
1.5 ozs caster sugar
half a lemon
300 ml pot of double cream
250 ml pot of natural yoghurt
meringue nests - 8 pack
half a kilo of strawberries or seasonal fruit
Line a 900g loaf tin with cling film. Place the sugar in the saucepan. Add 2 TBSP water and the juice of half a lemon. Place over a medium heat and cook until sugar has dissolved. Cool.
Whip the cream until it stands in soft peaks. Fold in the yoghurt. Crush the meringues into chunky pieces and add.
Quarter the strawberries or fresh fruit. Place 300g of them into the bowl of a food processor. Add the cooled syrup and blend until smooth to make a coulis.
Stir half the coulis into the cream mixture, mix lightly, stirring to create a marbling effect. Spoon into the loaf tin, layering with the remaining fruit. Place the terrine in the freezer for about 1.5 - 2 hours. It should be lightly iced but not frozen solid. Turn onto a serving plate. Cut into slices and serve with the remaining coulis.
It works out about 50p per serving.
