Sandras' One Egg Sultana Cherry Cake

3 cups plain flour
1 tsp baking powder (level sppon)
1 tsp Bicarb of soda
250g butter or marg
1 cup firmly packed brown sugar
1 1/2 cups sultanas
2/3 cup glace cherries (rinsed, dried and chopped in half)
1 egg
3/4 cup milk
1/4 cup white or cider or wine vinegar (not malt vinegar)

Line base and sides with 3 layers of baking paper, bringing 2 inches above pan.
Mix flours, baking powder and bicarb.
Fork in margarine till breadcrumbed.
Stir in sugar and fruit.
Add egg, milk and vinegar and mix.

Spread into prepared pan and bake at 150c for about 2 hours. Check half way through time and cover with baking paper if getting too brown.

Cover tightly with foil and cool in pan. Remove from tin only when quite cold.

Makes a lovely fruit cake reminiscent of the Marks and Spencer ones, golden inside with jewels of sultanas and cherries.

If you want, you can cut into 2 or 4 chunks, wrap well and freeze until wanted.
If you don't like cherries, add a few chopped nuts instead.
