200g (7oz) ladyfinger biscuits - they sell them in Lidl (like you would use for trifle)
300ml 1/2 pt espresso or strong filter coffee (cooled)
4 tbspns Amaretto (Almond Liquer again from Lidl)
4 eggs, separated
125g ( 4 1/2 oz) sugar
400g (14 oz) Mascapone cheese (Mercadona)
pinch salt
Cocoa powder to sprinkle on top
Put half the biscuits in a 9 inch serving dish, breaking as necessary to fit.
Spoon over half the coffee and half the Amaretto.
Whisk together the egg yolks and sugar until thick and creamy, add the cheese and stir well till thick and smooth. Whisk the whites to stiff peaks and add a pinch of salt.
Gently fold egg white into the cheese and egg mix.
Spoon half of this over the biscuits in the dish. Put another layer of biscuits on top, drizzle over with coffee and Amaretto again and top with cheese mix. Sift cocoa on top. Cover with cling film and leave in fridge overnight.
There! How easy is that? I dare say a bar would sell you a shot or two of Amaretto if you don't want to buy a bottle of it.
If you don't want to use raw eggs, I would suggest 1/4pt of whipping cream, whipped to stiff with the sugar and folded into cheese mix. (I have not tried it that way but see no reason why it should not work.)
